Instant Roasted Vegetables

As most of us are working from home these days, its getting difficult to maintain work-life balance.
I am always out of time, doesn’t matter how early I wake up or late I go to bed. So, some quick recipes save me most days.
This is one of those instant, healthy and delicious recipes for WFH days.
You can roast vegetables on hob or Oven. Here, I am going to use Oven as I really like the flavour the vegetables get in Oven.
I swear by this recipe. It is so easy and quick to prepare.

So, Without wasting anymore time… Let’s get started…

Ingredients required:

  • Broccoli – 200gms
  • Carrot – 2
  • Capsicum – 1
  • Onion – 1
  • Cottage cheese (Paneer) or Tofu – 100 gms
  • Potato and sweet corn (optional)
  • Salt, Black pepper
  • Lemon juice

You can adjust the quantity of vegetables according to your taste. Amount really doesn’t matter for this recipe.
So, Take a baking tray and line it with butter paper / foil. Spread all the vegetables over it (except Paneer and Corn).

  1. Spray generous amount of oil over all the vegetables.
  2. Sprinkle Salt and Black pepper as per taste.

3. Preheat oven for 10 minutes at 210 degrees (keep the temperature high while roasting veggies).
4. Place the tray in oven for 10-15 minutes and then take it out and add Paneer & sweet corn.

5. Bake for another 10-15 minutes and here you go…
Healthy Roasted veggies are ready.

Empty the veggies in a bowl and add some lemon juice.

Quick, delicious and healthy roasted vegetables are now ready…. !!! 😃

Really feel like mentioning this that I always intentionally burn these a little as I like their burnt taste a bit more. 🙈
